Cocktails Meet Finger Foods In These Effortless Snack Recipes

Cocktail-Inspired Finger Foods: Snacking With A Twist

1. Margarita Chicken Skewers

Ingredients

1.5 kg skinless, Boneless chicken breasts, cut into 12 strips

600 ml Frozen margarita mix, thawed

350 ml Don Julio Reposado tequila

240 gms Fresh cilantro, chopped 

4 tablespoons Chicken seasoning

Vegetable oil, for the grill

Baby arugula, for serving 

2 limes, halved, for serving 

Method

Put chicken, margarita mix, tequila, cilantro, and seasoning in a large resealable plastic bag. Squeeze out its air and seal the bag. Massage the plastic bag to mix the ingredients. Place the bag in a fridge for 30 minutes to an hour. Soak 24 wooden skewers in water. Preheat a grill to medium. Remove the chicken from the marinade and thread each piece onto a skewer. Oil the grill and place the chicken skewers on it for 1-2 minutes per side, or until the meat is cooked through. Serve on a platter with arugula and lime.

2. Bloody Mary Shrimp Shooters

Ingredients

24 Large Raw Shrimp peeled, tails left intact

700 ml Tomato juice

270 ml Smirnoff Vodka

50 ml Worcestershire sauce

8 teaspoons Horseradish

Several dashes Tabasco Sauce, to taste

Kosher salt

Lime wedges, thinly sliced, for garnish

Lemon Wedges, thinly sliced, for garnish 

Method

Prepare a medium bowl of ice water. Now, in a large saucepan, add water to boil over high heat. Salt the water until it tastes like the sea. Add shrimp to it and cook until the shrimp is just cooked through, for 30 seconds to 1 minute. Drain the shrimp and put it in the prepared ice water immediately. Set aside for some time.

Take a large container with a spout. Add tomato juice, vodka, Worcestershire sauce, horseradish and tabasco sauce to it. Whisk the contents to combine. 

In a plate, add a layer of kosher salt. Take shot glasses for serving and rub a lime or lemon wedge on the rims. Dip the glasses' edges in the plate with the salt so that the rims are covered with it.

Pour Bloody Mary mixture in the shot glasses and garnish each of them with cooked shrimp, along with lime and lemon wedges.

3. Sangria Skewers

Ingredients

1.5 kg Cherries, pitted and halved

750 gms Blackberries

750 gms Blueberries

30 Strawberries, cut into thick slices

6 Apples, diced into 1'' chunks

6 Peaches, diced into 1'' chunks

6 Limes, thinly sliced

handful of Lemon Slices (optional)

200 ml Simple Syrup

3 l Red Wine

6 Oranges, freshly juiced

350 ml Peach Brandy

Method

Take a mixing bowl and pour wine, orange juice, brandy and simple syrup. Stir the contents to combine. Add cherries, blackberries, blueberries, strawberries, apple, peach, lime, and lemon slices (optional). Stir to combine. Cover the bowl with plastic wrap and refrigerate for at least 4 - 6 hours. Before serving, skewer the fruits on to picker sticks and serve.
