1. Irish Cheddar-Whiskey Fondue

Ingredients (serves six as a main course or ten as an appetiser)

1 garlic clove, halved

240 ml Dry white wine

680 gms Irish Cheddar cheese, shredded or grated

1½ tablespoon Cornstarch

2 tablespoon Roe & Co Whiskey

Kosher or Sea salt

Freshly ground black pepper

Dipping accompaniments, as per your choice

Method

Take a large, heavy pot (cast-iron or enamelled cast-iron). Rub the halved garlic all over the inside of the pot. Set it over medium-high flame. Add wine and bring it to a simmer. Take handfuls of cheese and keep tossing it in the pot. Add handfuls of cornstarch as well. Keep stirring till the handful of each melts before adding the next. Reduce heat to medium. Stir constantly till the cheese melts completely. Add whiskey and heat till the mixture starts to bubble. Let it bubble for 1-2 minutes and then add salt and pepper to taste. Serve immediately (in a small dish set over a tea light to keep warm or in a fondue set) with the dipping accompaniments of your choice.

2. Mark Hix’s Cheese Fondue

Ingredients (Serves 4)

250 ml Double Cream

200 gms Cheese, Grated

80-100ml Milk-based vodka

Freshly Ground Black Pepper

Salt

Dipping accompaniments, as per your choice

Method

Take a bowl and heat water in it until it simmers. Add cream, cheese and vodka in it. Stir constantly until the cheese melts and the mixture has a thick, sauce-like consistency. Transfer the fondue to a small dish set over a tea light to keep warm or in a fondue set (if you have one). Keep stirring the mixture. Add salt and pepper, and more vodka if you wish. Place the dipping accompaniments alongside the fondue.

3. Boozy Hazelnut Chocolate Fondue

360 gms Semisweet chocolate chips

360 ml Heavy cream

1 tablespoon Butter

3 tablespoons Hazelnut liqueur

2 tablespoons Hazelnuts, chopped and toasted

Dipping accompaniments, as per your choice

Method

In a microwave-safe bowl, add chocolate chips, heavy cream and butter and mix to combine. Microwave for 2 minutes. Whisk until the mixture is completely smooth. Pour the hazelnut liqueur and stir until it is combined fully. Pour the fondue into a bowl or a fondue pot. Top with toasted hazelnuts. Serve warm with dipping accompaniments of your choice.

4. Spiked Chocolate Fondue

Ingredients

600 ml Whipping cream

360 gms Chopped bittersweet or semisweet chocolate

60 ml Orange liqueur/Amaretto/Hazelnut liqueur/Brandy

Assorted dippers of your choice

Method

Take a slow cooker and add whipping cream, chocolate and booze of your choice from the ingredients list. Stir to combine. Cover and cook on low-heat setting for 2.5 to 3 hours and halfway through the cooking, whisk once till the chocolate melts and the mixture is smooth. Serve immediately. If you don't intend to serve immediately, keep it warm in the cooker in a low-heat setting for 1 hour. Do note that the mixture is likely to become grainy if held longer. Serve the fondue with assorted dippers. In case the fondue thickens, add a bit of whipping cream to dilute the consistency as needed.

While it's great to learn about alcoholic beverages and alcohol-infused foods, it is important to also consume alcohol moderately. Remember to serve and drink responsibly to ensure you and your guests are healthy and out of harm's way. If you know anyone who has trouble controlling their alcohol intake, please refer them to a professional immediately.
