Planning A Sundowner Bash Menu? Here Are Some Food Ideas

A sundowner is only complete when all the elements are in place: venue, decorations, theme, music, drinks, and food, of course. After all, you need some grub to keep people entertained and showcase your culinary skills. Store-bought snacks, while delicious, are a shortcut and won’t help you set the tone of individuality you bring to the party. Here are four lip-smacking recipes that will be the highlight of your sundowner bash, and your friends will certainly crown you the host of the year.

Prawn Rawa Fry

Ingredients

For the prawn marinade: 

250 gms Deveined prawns 
1 ½ tsp Kashmiri red chilli powder  
1 tsp Cumin powder
½ tsp Turmeric powder
2 tbsps Vinegar
½ tsp Salt

For the rawa coating: 

½ cup Semolina  
¼ cup Rice flour  
Salt according to taste 
Oil for frying  

Method

Marinate the prawns in the spices and vinegar for about 15-20 minutes.

Drain any excess liquid once the marination is done. 

Then coat each piece in the semolina and rice flour mix. 

Heat oil in a pan and shallow fry the prawns for about 2-3 minutes. Ensure the pan is hot so the prawns cook thoroughly and the costing remains crisp. 

Serve with some coriander-mint chutney.

Keema Patti Samosa

Ingredients

15 samosa sheets 
¾ cup Onion, chopped
250 gms Ground meat (chicken or mutton)
2 tsp Fresh ginger garlic paste
½ tsp Turmeric powder
1 tsp Coriander powder
1 tsp Kashmiri red chilli powder
1 tsp Garam masala
Salt according to taste
1 tsp Lemon juice 
2 tbsp Coriander, chopped 
2 tbsp Mint, chopped
1 ¼ cup Green scallion, chopped 
1-2 Green chillies 
Oil

Method

Brown ¼ cup of onions in a pan, then add the meat and spices. 

Cover this and cook for 1-2 minutes or until the meat is almost done. Ensure that all of the water has evaporated from the pan. 

Take the pan off the heat and add coriander, mint, chillies, and chopped green scallion. 

Then begin by filling the samosas - turn the dough strip into a cone and add about a tablespoon or so of the filling. Seal the edges with a slurry of flour and water. 

Repeat this process till you’ve run out of both the dough and filling. 

Heat enough oil in a deep-bottomed pan and fry the samosa until golden brown. Serve with some coriander-mint chutney or ketchup.

Fruit Skewers

Ingredients

Strawberries 
Peeled and segmented orange pieces
Pineapple chunks
Peeled and chopped kiwi 
Melted chocolate

Method

Arrange the fruit chunks on the skewers in the order you desire. 

Place them on a baking sheet lined with parchment paper. 

Drizzle the melted chocolate over all the fruit skewers, then refrigerate. 

You can also sprinkle them with some flaky sea salt if you want. 

Serve the fruit skewers cold.

Pineapple Cream Cheese Finger Sammies

Ingredients

1 cup Cream cheese
1 cup Canned pineapple (crushed)
Loaf of white bread

Method

Smear a layer of cream cheese on untoasted white bread. The second layer will be the crushed pineapple. 

Sandwich with another slice of bread. Cut the crust off and the sandwich into four pieces. 

Serve immediately.
