Tequila-Lime Steak Tacos

These aren’t your average steak tacos. For a start, we marinate the steak in a tangy marinade that might just awaken all your senses. Here’s what you’ll need:

Ingredients for the marinade

  • 60 ml tequila (we recommend Don Julio Blanco)
  • Juice of 2 limes
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • A handful of fresh coriander, chopped
  • 1 jalapeno, seeded and finely chopped
  • Salt and pepper to taste   

Method

Combine all the marinade ingredients in a bowl. Add the steak (about 500 grams, sliced thinly) and make sure it’s well-coated. Let it marinate for at least 2 hours or overnight for the best results. Grill the marinated steak over high heat until it’s cooked to your liking. Serve on warm tortillas with avocado slices, diced onions, more fresh coriander, and a squeeze of lime. These steak tacos will have your mom question every other meal she’s ever had.

Vegan Tequila Tempeh Tacos

Who says vegans can’t have fun at a tequila party? These tacos are hearty and hide a tequila twist that will please everyone.

Ingredients for the filling

  • 45 ml tequila
  • 200 grams tempeh, crumbled
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 2 tablespoons maple syrup
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Method

Heat a pan over medium heat and add the tequila, letting it simmer briefly to cook off the alcohol. Add the crumbled tempeh, beans, and corn. Stir in the spices and maple syrup, and let everything cook together until well combined and heated through. Adjust seasoning as needed. Spoon the mixture into charred tortillas and top with diced tomatoes, shredded lettuce, and a dollop of vegan sour cream.

Tequila Lime Chicken Tacos

For a lighter option that doesn’t skimp on flavour, tequila lime chicken tacos are the way to go.

Ingredients

  • 60 ml tequila
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 500 grams chicken breast, thinly sliced

Method

Whisk together the tequila, lime juice, olive oil, garlic, salt, and pepper in a bowl. Add the chicken slices, ensuring they are thoroughly coated with the marinade. Let it sit for at least an hour. Grill the chicken until it’s golden and cooked through. Serve on tortillas with a fresh salsa made from chopped pineapples, cucumbers, and jalapeños.
