Strawberry Mojito Recipe
(For one serving)
This amazing Strawberry Mojito recipe is adapted from the book The Berry Bible.
Ingredients
30 ml Simple syrup (you can also use 1 tablespoon of sugar instead)
3 Fresh Strawberries
2-3 Fresh spearmint sprigs, chopped (if you prefer smaller mint pieces in your cocktail)
30 ml Lime Juice, freshly squeezed
60 ml Captain Morgan White Rum
90-120 ml Soda water
Sprig of mint or strawberry slices, for garnish
Method
Take a highball glass and keep it in the fridge for 30 minutes. Remove the chilled glass from the fridge and add simple syrup (or sugar), strawberries and mint leaves. Muddle them using the back of a spoon or a muddler. Crush the berries and mint leaves well. Pour lime juice and rum and stir well to combine. Fill the glass with ice and top off with soda water. Gently stir. Garnish with mint sprigs or strawberry slices.
Note
Basic simple syrup is made using equal parts sugar and water. The water is heated with sugar until the latter dissolves fully. It is best to make larger portions of the syrup, especially for the summer so you can whip out cocktails easily. Keep the batch portion of simple syrup in the fridge, it will stay good for months.
