A Dream Vegan Menu: Easy Recipes For Plant-Based Snacks And Drinks

Vegan Delights for Every Palate: Plant-Based Snacks and Drinks

Vegan drinks may use fruits, veggies, nuts, and avoid a plethora of diverse ingredients. But believe us, you can still make delicious food and drinks with just vegan ingredients! Fruits provide the signature sweetness and tanginess, veggies and even nuts add a smooth texture and a unique flavour as well. This article brings out some delicious recipes to make vegan drinks. Try them out and you will surely not feel the absence of commonly used ingredients used to make these drinks!

1. Nut Butter And Rice Cakes

Learn to make pecan butter which goes well with rice cakes and a little fruit.

Ingredients

700 gms Raw Pecans

Salt to taste

1 tablespoon Maple syrup

1 teaspoon Pumpkin spice or cinnamon

1 teaspoon vanilla

Recipes

Line a baking sheet with parchment paper and preheat your oven to 160˚C. Spread the pecans evenly on the baking sheet and roast for 10 minutes. Be careful not to burn the pecans. 

Once the pecans are roasted, set them aside to cool. In a food processor, add the pecans and blend for 30 seconds. Continue blending till you get a smooth and creamy pecan butter. 

Infuse additional flavours to the butter by blending in the spice and vanilla. After the ingredients combine with the pecan butter, transfer it to a mason jar and stir in the maple syrup. Store it at room temperature or in the fridge.

Enjoy the nutty butter with rice cakes and fruits.

2. Tahini and Chocolate Chip Breakfast Sweet Potato

Ingredients

1 medium-sized Sweet potato

1 tablespoon Tahini 

1 tablespoon Vegan chocolate chips 

Cinnamon

Nutmeg

Cloves

Allspice

Method

Wash the sweet potato and using a fork, poke several holes around it. Place it in a microwave-safe dish and microwave for 5 minutes. Once heated, you should be able to push a fork into the potato without any effort. If the sweet potato isn't tender enough, then microwave for 30 more seconds and check for the texture, repeat until you properly cook it.

Once cooked, cut the sweet potato down the centre, spread and then fluff with a fork. Drizzle with tahini and top with chocolate chips. 

Optional Ingredients For Toppings:

Cinnamon

Nutmeg

Cloves

Allspice

3. Vegan Black Russian

Ingredients

5 gms Date syrup

50 ml Smirnoff vodka

50 ml Coffee liqueur

50 ml Oat milk

50 ml Coconut cream

Method

Drizzle the date syrup into a serving glass and swirl it to coat the inner surface. Fill the glass with ice cubes. Add vodka and coffee liqueur. In a mixing glass, stir oat milk and coconut cream and pour the mixture into the serving glass. Stir to combine and serve.

4. Vegan Eggnog

Ingredients

150 ml Almond milk

40 ml Coconut cream

Pinch of Ground nutmeg 

Pinch of Cinnamon powder 

Pinch of Cloves

10 gms Cashew nuts

10 gms Pitted dates

3 ml Bulleit bourbon (optional)

3 ml Captain Morgan (optional)

Vegan whipped cream, to serve

Cinnamon powder, to serve

Cinnamon sticks, for garnish

Method

In a blender, blitz almond milk, coconut cream, spices, cashew nuts, dates and alcohol (if using) till you get a smooth and creamy liquid. Pour this vegan eggnog into mugs or tumblers. Top with whipped cream, dust with cinnamon powder and garnish with a cinnamon stick to serve.
