Watermelon Mojito: How To Revamp A Classic Summer Cocktail

Watermelon Mojito: A Refreshing Twist on a Classic Summer Cocktail

Imagine if summer had a flavour. Not just any flavour, but one that made you feel like you were lounging by the pool without a care in the world, even if you were just sweating it out on your balcony. That's exactly what we're channelling into our cocktail shaker today with a refreshing watermelon mojito. It's not just a twist on a classic; it's like the summer version of your favourite song—familiar yet excitingly fresh.

Now, before we dive into the mixing and muddling, think about what you are going to munch on. Because, let’s face it, good drinks deserve great company. Spicy grilled prawns or sweet and sour crispy tofu are the perfect companions to our watermelon mojito's zesty notes. The heat from the prawns and the tofu balances the drink's sweetness.

Watermelon Puree Meets Rum

Start with 90 ml of strained watermelon puree. The straining part is crucial; we're after that smooth, velvety texture that blends seamlessly into our cocktail, not a chunky salsa. Then, we bring in 6 ml of a light rum, because what’s a mojito without a little pirate spirit?

Fresh Lime Juice and Simple Syrup

No mojito, watermelon or otherwise, would dare show its face without the kick of lime. Squeeze in the fresh juice of half a lime to cut through the sweetness with its acidity. Add to this 20 ml of simple syrup, because while life doesn’t always have to be sweet, your mojito certainly should be.

Club Soda

The final step before you garnish the drink is a top-up of club soda, because if you’re not bubbling with excitement by now, you soon will be.

Bringing It All Together

In a tall glass, muddle the lime juice with the simple syrup to awaken the flavours. Add the watermelon puree and rum, stirring to introduce them to one another. Fill the glass with crushed ice; the more, the merrier, as it’s this ice that will keep your mojito cool and your spirits high. Top with club soda and give it a gentle stir, not to disturb the layers but to blend them into a cohesive whole.

Garnish with a mint sprig, slapped between your palms to release its oils, and a small wedge of watermelon.

With your spicy grilled prawns and crispy tofu, you’re all set. Every bite is a burst of flavour that complements the cool, sweet tang of your watermelon mojito.
