Chilli-infused spirits are a unique mixological element since spice matched with spirits requires precision in technique, as its flavour has the potential to overwhelm the nuance of a beverage instead of complementing it. Most cocktails rely on citrus, sweetness or bitterness, but few incorporate controlled heat as a primary characteristic, making the picante cocktail unique by blending it into its core without overpowering the foundation.
240 ml tequila or vodka 1 fresh red chilli, sliced thinly 1 fresh green chilli, sliced thinly
Add sliced chillies to a sterilised glass jar and pour the neutral spirit over the chillies, ensuring they are completely submerged.
Seal the jar and allow it to infuse for 12-24 hours, making sure to taste every few hours to check spice levels.
Strain the infusion through a fine mesh sieve or cheesecloth to remove chilli residue and solid bits.
