A versatile drink that traditionally spotlights the botanicals in gin can also be given a non-alcoholic spin and made with a variety of ingredients. While carbonation elevates its texture, a frothy egg white layer adds a creamy finish – giving it a similar mouthfeel to its cocktail adjacent.
60ml fresh lime juice 60ml simple syrup 120ml tonic/soda water Lime wheel or cucumber strips, for garnish Ice cubes
Combine the lime juice and simple syrup with ice and shake well for 10-15 seconds to chill the mixture.
Strain and top up with tonic or soda water, depending on your fizzy preference.
Garnish with a lime wheel or cucumber strip; stir gently before serving.
Try adding a few drops of elderflower cordial or mint leaves for a unique twist.
For an elevated texture, shake the lime juice and simple syrup with a small amount of egg white to create a frothy top.
