This variation of the classic mojito replaces conventional sweetness with the mellow rounded sweetness of fresh muskmelon – as a reminder that cocktails do not necessarily have to be reinvented, they simply need to be reoriented. Whether served in a high ball or poured into a coupe, the fruity spin maintains a steady core, allowing each component to find its place in a distinct manner.
30 ml white rum ½ cup fresh muskmelon cubes 10-12 mint leaves, torn roughly 15 ml lime juice 10 ml simple syrup 1 pinch salt A handful of ice cubes Soda water, for topping Muskmelon wedge or mint sprig, for garnish
In a chilled shaker, add fresh muskmelon cubes that are ripe yet firm enough to yield juice without becoming mushy.
Add the torn mint and lime juice before muddling gently to extract oils from the mint and juice from the melon.
Add the simple syrup and pinch of salt and stir carefully to dissolve the salt into the juice, which rounds flavour and mellows the sweet-sour foundation.
Pour in 30ml white rum before shaking vigorously with plenty of ice, until the surface is cool to touch.
Strain into a chilled coupe or high ball glass.
Top up with soda wate before stirring briefly and lightly, to settle the blend.
