Rose ice cubes serve as visual details that give a beverage centrepiece status by drawing attention and affecting perception in an elegant manner. Their role extends beyond simply infusing flavour directly but also to occupy space with purpose.
12–18 food-grade rose petals 1.5 cups distilled/boiled water, cooled
Gently rinse the petals with cold water to get rid of debris or soil residue before drying them with a clean towel and setting aside.
Pour a small amount of distilled or cooled boiled water into each ice tray compartment – enough to cover the bottom; add one or two rose petals to each and freeze until firm.
Once the initial layer is frozen, fill each cube mould to the brim with additional water, to enable the shape to hold the petals suspended in the centre as it freezes.
Unmould the cubes and transfer to an airtight container or zip-lock bag to avoid freezer odours from tainting their flavour.
Add the rose ice cubes to pale-hued beverages such as lemonades, sodas, spritzers and iced teas where their appearance can take centre stage.
