  • 500 gm ripe tomatoes, chopped
  • 1 small cucumber, peeled and chopped
  • 1 bell pepper, deseeded and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of red wine vinegar
  • 60 ml Smirnoff vodka (keep it light to not overpower the fresh veggies)
  • A splash of hot sauce for that fiery kick
  • Salt and pepper to taste

Blend these ingredients until smooth, then strain into a large bowl. Chill in the fridge for at least an hour to let the flavours mingle and develop.

While your gazpacho is chilling, let’s get those shrimp ready. You’ll need:

  • 200 grams medium-sized shrimp, peeled and deveined
  • 1 teaspoon of olive oil
  • 1 teaspoon of smoked paprika
  • A pinch of cayenne pepper
  • Salt to taste
  • Toss the shrimp in the spices and olive oil, then quickly sauté them in a hot pan until they’re pink and slightly charred around the edges. Set them aside to cool.
