Chocolate pudding, on its own, has been enjoyed for centuries. Different cultures around the world have developed variations of the dessert. The chocolate pudding as we understand it today originated in the United States around the late 19th century. Its creamy texture and rich chocolate flavour meant that it quickly gained popularity and soon became a mainstay of the American diet. Over the years, chefs and home cooks have continued experimenting with the chocolate pudding, adding their twists and additions to the classic recipe. Adding alcohol has evolved as a popular option too, and one that we’re sure interested in exploring more.

We chose to add Johnnie Walker, known for their Scotch whiskies. Well renowned and offering deep flavour in their products, they produce high quality whiskies which mix really well with food, elevating the food’s taste by adding more depth and complexity to it. The smooth and complex flavour profiles of the whisky elevate the overall taste of whatever food it's being added to.

For your pudding, you want to put some thought into the type of whisky you choose. Some come with a hint of spice, others have fruity overtones and yet others have a certain smokiness to them. Depending on what you want your pudding to taste and feel like, decide which whisky you will use. Whatever whisky you choose, keep in mind that the whisky will add a rich and smoky flavour to your pudding, balancing the sweetness of the chocolate perfectly. Overall, you end up with a sophisticated and nuanced dessert.

Here are some tips and tricks to keep in mind as you go about making this pudding

Use high-quality chocolate with at least 70% cocoa for a rich and intense flavour where the chocolate stands out.

When you're heating the cream, be careful not to let it boil. If you boil the cream, that will cause it to separate and loosen the texture of the pudding. As soon as the cream begins to simmer, remove it from the heat.

When combining the melted chocolate with cream, stir gently to avoid incorporating air into the mixture. Air bubbles lead to a frothy texture in the pudding, which will spoil the experience.

The eggs might curdle in the chocolate mixture if theyre too cold. So, make sure they are at room temperature before whisking them with the sugar and salt.

Let the pudding chill in the fridge for at least two hours to set completely. This will allow the flavours to meld intricately and let the pudding firm up.

When serving, add a dollop of whipped cream and some chocolate shavings on top to enhance the presentation and add a creamy contrast to the pudding.

Feel free to experiment with the type of whiskey you're using, depending on the flavour combinations you want to highlight. Just make sure that whatever whisky you use complements the chocolate flavour and enhances the overall experience of the pudding.
