Lemon Vodka Sorbet

Ingredients

1 cup of water
1 cup of granulated sugar
1 cup of freshly squeezed lemon juice 
Smirnoff Red Vodka (add according to taste)

Method

Combine sugar and water in a saucepan. Stir until the sugar completely dissolves. Set aside to cool. 
Then add a cup of freshly squeezed lemon juice and Smirnoff Red vodka. 
You can also incorporate mint into this sorbet if you want. 
Pour the lemon vodka mixture into a shallow dish and let it freeze for about 4 to 5 hours. 
Serve scoops of sorbet in cocktail glasses decorated with lemon wedges and mint sprigs.

Ingredients

1 cup of water
1/2 cup of granulated sugar 
Lemon zest and juice 
Smirnoff Red Vodka

Method

Combine water and sugar in a saucepan over medium heat. Ensure that the sugar is completely dissolved before letting it cook off heat. 
Add lemon zest and juice to this mixture and stir to combine. 
Once the mixture has cooled down, pour the desired amount of Smirnoff Red vodka. 
Pour this into popsicle moulds, and leave it to freeze for a couple of hours.

No-Bake Lemon Vodka Pie

Ingredients

Crushed crackers
Melted butter
Condensed milk
Freshly squeezed lemon juice 
Heavy cream 
Lemon zest for garnish

Method

Create the no-bake pie crust with crushed crackers and melted butter. Press this mix into a baking pan lined with butter paper. Refrigerate this for an hour. 
In a mixing bowl, combine condensed milk, heavy cream and lemon juice. 
Pour this mixture over the form cracker base. Refrigerate once again. 
Decorate with lemon zest and serve with a side of whipped cream.

Simple Lemon-Infused Ice Cream

Ingredients

2 cups of heavy cream
1 cup of whole milk
Corn flour 
¾ cup of granulated sugar
Zest of 2 lemons
½ cup of freshly squeezed lemon juice 
Smirnoff Red vodka

Method

Whisk together heavy cream, milk, corn flour and sugar in a mixing bowl. 
Heat this mixture in a saucepan till you get a runny custard-like consistency. 
Then set this aside to cool then add the lemon zest and the freshly squeezed juice. 
Pour this into your ice cream maker or into a bread tin and freeze. If you’re not using an ice cream maker, then make sure you mix this every two hours. 
Once your ice cream is done, serve with a garnish of mint.

Lemon Vodka Mousse

Ingredients

Lemon juice
Lemon zest
Granulated  sugar
Smirnoff Red vodka 
Egg yolks 
Heavy cream
Cold water
Lemon slices or zest, for garnish (optional)

Method

In a saucepan, combine the lemon juice, lemon zest, and granulated sugar. Once the sugar dissolves, set this aside.
Whisk egg yolks slowly into this mixture so that they don’t scramble. 
Put the saucepan back on heat so that you get a custard-like consistency. 
Once the custard is slightly cool, then add the vodka. 
Whip cold heavy cream in a mixing bowl into soft peaks. 
Fold the vodka infused custard into the heavy cream. 
Spoon the mousse into serving bowls and garnish with lemon slices or some lemon zest.
