Ingredients

60 ml Smirnoff vodka
30 ml soy sauce
30 ml lime juice
15 ml honey
1 finely minced garlic clove
5 g grated ginger
Pinch of red pepper flakes (optional)
Chopped cilantro or green onions for garnish (optional)

Instructions

Take a small saucepan and combine the Smirnoff vodka, lime juice, honey, soy sauce, minced garlic, grated ginger and a pinch of red pepper flakes. Heat the pan over medium-low heat, and stir it occasionally, until the ingredients begin to simmer. Reduce the heat of the pan to low and let the sauce gently simmer for 5-7 minutes. This will allow all the flavours to combine and the alcohol to cook off.

Adjust the seasoning according to taste and then remove the sauce from the heat. Let the sauce cool slightly, garnish with chopped cilantro or green onions (optional) and serve.

Spicy Mango Mojito Sauce

Ingredients

30 ml white rum
150 g diced mango
15 ml lime juice
10 ml honey
10 mint leaves
Pinch of chilli flakes

Instructions

Combine the diced mango, white rum, lime juice, chilli flakes, mint leaves, and honey in a blender and blend until they form a smooth mixture. Adjust the seasoning according to taste, transfer into a serving bowl and chill the dipping sauce until served.

Soy-Ginger Sake Sauce

Ingredients

30 ml sake
60 ml soy sauce
15 ml lime juice
5 g brown sugar
10 g grated ginger

Take a small saucepan, combine all the ingredients and cook over low heat, stirring until the brown sugar has dissolved. Gently simmer for 2-3 minutes and then remove the pan from the heat. Let it cool down to room temperature and then serve.

Ingredients

20 ml coconut rum
120 ml coconut milk
15 ml lime juice
5 g sugar
10 g fresh Thai basil leaves

Instructions

Combine all the ingredients in a blender and blend until smooth. Adjust sweetness or acidity according to taste. Refrigerate the dipping sauce until served.

Tequila Lime Cilantro Dip

Ingredients

20 ml Don Julio Blanco tequila
120 ml Greek yoghourt or sour cream
10 g chopped cilantro
5 g minced garlic
15 ml lime juice
Pinch of salt

Instructions

In a mixing bowl, combine the tequila, lime juice, Greek yoghurt or sour cream, minced garlic, chopped cilantro, and add salt according to taste. Stir well and adjust seasoning. Refrigerate until ready to serve.

Honey Bourbon Peanut Sauce

Ingredients

20 ml bourbon
30 ml soy sauce
30 ml honey
Dash of sesame oil
80 g peanut butter
5 g minced garlic
