10 fresh mint leaves

30 ml fresh blueberry juice 

10 ml freshly squeezed lime juice

15 ml white rum

30 ml chilled soda water

Crushed ice (enough to fill and top the glass)

Frozen blueberries (for garnish)

Thin lime peel twist (for garnish)

Small mint sprig (for garnish)

Steps: 

Start with a tall, chilled glass, ideally a Collins or highball. Then, add ten new mint leaves. Gently press the leaves against the glass's sides using a flat muddler or the back of a spoon. This releases the mint oil without overly breaking down or bitterising the leaves.

Then add 10 ml of lime juice and 30 ml of blueberry juice. The acidity of the lime counterbalances the berries' sweetness with the acidity of the lime. To chill everything down, add crushed ice halfway to the glass.

Pour 30 ml of chilled soda water slowly over the ice after adding 15 ml of white rum. Using a long spoon, gently stir, bringing up the flavours from the bottom without over-stirring the mint.

You need to add more crushed ice to the glass's rim until it creates a gentle mound. Add a mint sprig, a lime twist, and frozen blueberries to finish.
