If you’ve ever strolled through a bustling Mexican market, you’ve likely encountered elote: grilled corn on the cob slathered in creamy mayo, sprinkled with tangy cotija cheese, a squeeze of lime and a dusting of chilli powder. 

It’s simple street food perfection. It’s heaven on a plate. Now, imagine all those mouth-watering flavours in a glass. That’s the magic of the Mexican Old-Fashioned.

The Base: Tequila, Of Course!

To start, you’ll need a good quality tequila—because nothing says ‘Mexican cocktail’ quite like tequila. This recipe will benefit from 50 ml of tequila. Its crisp, clean flavour provides the perfect foundation for the layers of smooth complexity we’re about to add.

Here’s where things get interesting. We’re making an elote syrup that captures the essence of that iconic street corn. 

Combine equal parts of corn kernels (fresh or frozen), water and sugar in a saucepan. Add a pinch of salt and a dash of lime zest. Simmer until the corn is tender and the mixture has thickened slightly.
