Meen Moilee offers a unique taste of the coast in every bowl.  It begins with fish softly simmered in a blend of turmeric, green chilli, and coconut milk.  However, there's an interesting twist: It looks spicy, but it doesn't overwhelm with spice.  The fish remains tender and intact, treated with the utmost precision throughout the process.  

When it comes to pairing, a light and floral single malt whisky with subtle notes of vanilla and honey is a well-balanced choice. Chemmeen Roast is perfect for those moments when you crave prawns that are rich and full of character.  First, the prawns are cleaned and marinated with chilli powder and turmeric. Then, they’re tossed into a hot pan along with shallots, garlic, crushed black pepper, and curry leaves.  It’s slow-roasted until everything becomes sticky, dark, and filled with a pungent aroma. The dish is definitely not shy of peppers and chillies! 

Consider selecting a richer, sherry-cask-aged single malt that features notes of dried fruit and spice.  The whisky's sweet base nicely complements the spice of the roast. It is a smoky-over-smoky combo!

3. Karimeen Pollichathu (Pearl Spot Fish in Banana Leaf)

Karimeen Pollichathu really showcases the art of cooking, especially with that striking banana leaf wrapping technique. The pearl spot fish is marinated in a rich masala that includes shallots, chilli, tamarind, tomato, and coconut oil. It's then wrapped in a banana leaf and carefully pan-cooked to perfection. The fish is simmered in this gravy, allowing it to soak up the spices while remaining intact. The uniqueness lies in the grainy texture of the ground coconut and the rich, layered flavour.
