Ingredients:

  • Chicken Breasts: 4 boneless, skinless pieces, perfect for absorbing the marinade.
  • Tequila: 60 ml, to give that unique, zesty kick.
  • Lime: Juice of 2 limes for that tangy punch, and zest of 1 lime for an extra citrusy boost.
  • Orange Juice: 120 ml, for a sweet, fruity balance.
  • Olive Oil: 3 tablespoons, to bind the marinade together.
  • Worcestershire Sauce: 1 tablespoon, for a depth of flavour.
  • Spices: 1 teaspoon each of paprika and garlic powder, to add warmth and earthiness.
  • Cilantro: A handful, chopped, for a fresh, herby finish.
  • Salt and Pepper: To taste.

Marinade Magic:

In a bowl, whisk together the tequila, lime juice and zest, orange juice, olive oil and Worcestershire sauce. This concoction is where all the magic starts. The tequila tenderises, the lime adds zest and the orange juice brings its sweet notes to the party. Stir in the paprika and garlic powder. These spices are the rhythm of the recipe—essential but understated, laying down the base flavours. Season with salt and pepper according to your preference.

Chicken Meets the Marinade:

Place the chicken breasts in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal or cover, and let this mingle in the fridge. For the best flavours, leave it for at least 2 hours, but if you’ve got time, let it sit overnight. The longer it marinates, the more pronounced the flavours.

When ready to cook, preheat your grill or oven. For grilling, medium heat works best, allowing the chicken to cook through without burning. If you're baking, 180°C (350°F) is the sweet spot.

Grilling to Perfection:

Remove the chicken from the marinade and shake off the excess. Don’t discard the marinade just yet – we'll use it later. Grill the chicken for about 6-7 minutes on each side, depending on the thickness. The goal is a nice char on the outside while keeping it juicy inside.

While the chicken grills, pour the remaining marinade into a small saucepan. Bring it to a boil, then reduce the heat and let it simmer until it thickens slightly. This will be your sauce.

Serving It Up:

Once the chicken is cooked, let it rest for a few minutes. Then slice or serve whole, drizzled with the reduced marinade sauce.
