Make Irish Cream Liqueur-Infused Motichoor Cheesecake This Festive Season; Recipe Inside

Irish Cream Liqueur

During the festive season, a number of different sweets from ladoos to cakes to burfis are prepared at home to serve guests at house parties and get-togethers. Combine two such interesting desserts – motichoor ladoo and Baileys cheesecake – to prepare an interesting sweet treat for a celebratory feast.  

Baileys Irish Cream Liqueur has a very silky texture which pairs well with the soft cream cheese layer integral to a cheesecake. So, Baileys is often added to this dessert to imbue it with slightly sweet and bitter notes, simultaneously building into its creaminess.   

1For its part, motichoor ladoo is made using sweetened besan flour balls that are mixed with lots of ghee before they are folded into circular treats. Adding a layer of motichoor crumble to the cheesecake is like mixing two very decadent sweets together in a pairing that is rather luxurious. Chef Shreya Agarwala prepares this easy-to-make Baileys Motichoor Cheesecake ahead of the festive season.

Ingredients:   

For the crust:  

¾ cup (around 15 digestive biscuits) crushed  

2 tablespoons melted butter  

For Baileys Cheesecake Layer  

220 gms softened cream cheese  

50 gms powdered sugar 

30 ml Baileys Irish Cream Liqueur  

¾ cup whipped heavy cream  

5-6 medium-sized crumbled motichoor ladoos   

Crushed nuts for garnish

Method:  

– First, begin by preparing the cheesecake crust. Mix ¾ cup or around 15 digestive biscuits with 2 tablespoons melted butter and set aside. Add additional 1 tablespoon butter if required. Next, crush the 5-6 medium-sized crumbled motichoor ladoos and set aside for assembling the cheesecake.  

For the cheesecake layer, mix the 220 gms softened cream cheese, add 50 gms powdered sugar and whisk until soft. Fold in ¾ cup whipped heavy cream. Once the mixture comes together, add 30 ml Baileys Irish Cream Liqueur and mix well. The cream cheese layer is now ready.  

For layering the cheesecake, first add the biscuit to the base of the serving tin, followed by the Baileys cream cheese layer and top it off with crushed motichoor ladoos. Garnish with crushed nuts. The Baileys Motichoor Cheesecake is now ready. Store it in the fridge for a couple of hours before guests start arriving so all the layers are set beautifully.    

Using Baileys in desserts is an inventive way of imbuing them with more depth and flavour diversity. Indian sweet treats go really well with these flavour combinations, making the motichoor and Baileys cheesecake fusion a tasty dessert befitting the festive occasion.
