The Honey Bee cocktail is a wonderful and lesser-known, yet equally appealing, member of the classic ‘sour’ cocktail family. It is constructed on a simple, beautiful foundation with three key elements. While not as well-known as its cousin - the bee’s knees cocktail (which utilises gin instead of rum), the honey bee is frequently referenced in cocktail literature as a rum version of the classic.
Chill a coupe or martini cocktail glass completely by freezing it or filling it with ice water.
In a cocktail shaker, combine the light rum, honey syrup and freshly squeezed lime.
Add ice cubes into the shaker, secure the top and shake properly for 15-20 seconds until the surface is well-cooled and frosted.
Strain the mixture into a chilled glass and garnish with a lime wheel.
