The Gin Rickey cocktail is a beloved traditional drink known for its simplicity and crisp, unsweetened character. Named after Colonel Joe Rickey, an individual renowned for preferring bourbon and soda with a squeeze of lime and most importantly, no sugar - the original was a bourbon Rickey cocktail. However, the gin variation of the cocktail became more popular.
Chill a highball or Collins glass thoroughly by freezing it or filling it with ice water.
In a mixing glass, blend the gin with the fresh lime juice before adding ice cubes into the mixing glass and swirling for 20-30 seconds until thoroughly chilled.
Discard the ice water and fill the chilled highball glass to the brim with fresh ice cubes; transfer the mixture from the mixing glass to the prepared serving glass.
Top with cooled soda water and gently whisk to blend. Garnish with a lime wedge or wheel.
