Method

    Step 1

    Lightly muddle mint leaves in a tall glass to release their aroma before adding the lime juice, honey syrup and ginger syrup.

    Pour in the scotch whisky and Amontillado sherry, then fill the glass with crushed or cubed ice.

    Stir briskly for 15-20 seconds, swizzling up and down with a bar spoon to chill and distribute the ingredients evenly.

    Add more ice as needed, garnish with a mint leaf and serve with a swizzle mixing wand and straw.
