    In a shaker, combine the gin, strawberry syrup, lemon juice and egg white to emulsify the white and give it a vigorous dry shake i.e. without ice.

    Add ice to the shaker and mix again until well-cooled and foamy.

    To remove any ice shards or foam bubbles, double strain into a chilled coupe glass.
