Method

Grab a highball glass and add a few mint leaves to it. 

Next, pour 20ml of simple syrup into the shaker. Using a muddler, muddle the mint leaves gently with the syrup to release its essence and aroma. Don’t exert too much pressure on the leaves, as it can turn bitter.

Fill the shaker with ice. 

Using a measuring cup or a cocktail jigger, measure and pour 60ml of Captain Morgan Rum and 20ml of freshly squeezed lime juice into the shaker.

Close the lid of the shaker and shake vigorously until the surface of the shaker feels chilled. 

Using a cocktail strainer, strain the mixture into a highball glass filled with fresh ice. 

Top up the drink with a splash of soda water and gently stir to combine. 

Garnish with a sprig of mint and lemon wedge.
