Method

1. Pomegranate-lime syrup recipe: In a small saucepan, mix together 175 ml of sugar and 175 ml of pomegranate juice. Heat the mixture, occasionally stirring, until the sugar dissolves. Remove from heat and stir in 1 tsp of grated lime zest and 2 tbsp of fresh lime juice. Allow the mixture to cool to room temperature and then strain it. The syrup is now ready to use and will make approximately 250 ml.

2. Grab a cocktail shaker and fill it with ice.

3. Measure and pour 60ml of Tanqueray No.10 gin, 22ml of fresh lime juice, and 15ml of Pomegranate-lime syrup into the mix. 

4. Shake the contents vigorously until the ingredients are well combined.

5. Strain the mixture from the shaker using a cocktail strainer into a flute. 

6. Top up the drink with sparkling wine.

7. Garnish the cocktail with a lime twist and pomegranate seeds.
